Vegan Mousse? Mousses? Meesses?

I'm not sure how to properly pluralize mousse, especially in this case considering it is not the animal and most people assume they come in singles. However, I am extremely positive I will always say yes to this vegan dark chocolate mousse, especially late at night!

Holy cow.....or lack there of!
This mousse is just as silky, smooth, airy and delicious as the good old fashioned, knock ya on your boots type that your grandma would make. The only HUGE difference is, there is NO DAIRY and NO EGGS in this mousse.
Yup that's right. Totally vegan. Hard to believe, but would I lie to you? Come on now.
This treat is perfect for a late night snack for you, yourself, and no one else. Or, for a dinner party dessert to keep people feeling light and drinking more wine!
Ingredients:
- 1 can aquafaba (this is what makes the mousse have the texture of a mousse without all that added cows milk!)
- 1/2 cup dark chocolate (I use unsweetened raw chocolate and make it into my own with coconut oil and agave, but any type of dark chocolate will work!)
- 1 tsp pure vanilla extract
This recipe is so simple!
Beat the aquafaba until soft peaks form. --- Fold in the melted chocolate and vanilla, but be careful to not over mix.
Then, distribute the mousse in desired serving containers and let rest in the fridge for 3+ hours!
So. Simple. 😉
What the faba is aquafaba?!?
Aquafaba is essentially just chickpea water.
In more a more professional explanation:
Aquafaba is water that chickpeas have been cooked in. It has the ability to mimic properties such as egg whites and in some cases (such as with this mousse) it can totally replace the need for eggs or dairy.
*note: aquafaba is mostly used to replace the use of eggs or egg whites in baking and some cooking. In most cases the need for a a milk or alternative milk will still be necessary. We just got lucky with this recipe!
