Summertime peach cobbler is the perfect way to icorporate fruit into your diet

When Costco has peaches on sale AND you haven’t been enjoying the fruits of the summer nearly as much as you should be, this is the best way to Handle your situation.

Homemade, old school gold school peach cobbler!

Warm, ooey-gooey, heart warming, tummy filling goodness! The steps are simple and the ingredients are even more simple, so I’ll just get past the quick chit chat and move on to the recipe.

Not much back story here besides the fact that Costco had peaches on sale that looked too good to not do something with!

Filling:

5 large peaches cored and sliced

1/2 cup granulated sugar

1/4 teaspoon salt

Batter:

6 Tblspn butter (sub vegan butter but avoid standard oils such as coconut oil)

1 cup all purpose flour

1 cup grabulated sugar

2 teaspoons baking powder

3/4 cup milk ANY

ground cinnamon to taste —my rule is the more cinnamon the more boom boom pow!, but tread lightly

Directions:

Add all filling ingredients to a sauce pan on medium heat and cook until sugar is dissolved. Set off to side to cool.

Preheat oven to 350 degrees Fahrenheit and grease a 9 X 13 baking dish.

In a a large bowl, mix together flour, sugar, and baking powder and butter until crumbly texture is formed. Slowly add in milk until just combined.

Pour mixture into greased pan, spoon peach filling mixture onto batter mixture in pan, and sprinkle with some more cinnamon on top!

Bake at 350 for 40 minutes.
