Sundays in the summer are meant for one thing and one thing only....eating ice cream.

When you have too many banana and strawberries then of course strawberry nice cream is bound to become an outcome of your Sunday festivities. And what better to pair with the tart nice cream treat than a sweet, warm, fluffy strawberry banana bread.


Talk about the ultimate ice cream sandwich!


I made this nice cream just like any other banana based nice cream, the magic is in the bread.



The secret behind this bread having the perfect puff of fluff, longest counter top life, and best moisture consistency is patience.

I only use bananas that have just started to spot brown. I mash them very slowly and mix the ingredients at the pace of a sloth it seems like sometimes. Then comes the baking.

To bake this loaf takes about 50minutes at 350, if not one full hour.


Even though it takes some time to get to the finished product, the outcome is more than worth it!

The strawberrues can be treated just like chocolate chips as well! I choose to use my banana walnut bread recipe and replace the walnuts for strawbrrries. The only tip to keep in mind is to pay the strawberries mostly dry before adding to the batter! Too much moisture is never your friend when it comes to baking banana bread!



This exact loaf is available gluten free and totally vegan as well!
