What happens when you mix a vegan diet with a craving for cheesecake? Well, a pretty delicious, better than real cheesecake, dessert! That's what!
About a month ago I was discussing some of the not so easy restrictions of a vegan diet when a craving hits with one of my coworkers, who lives a vegan lifestyle. One thing she told me she had been craving for months was cheesecake! But how is one who doesn't eat any thing even remotely close to cheese satisfy such a craving?!?! I'll tell you how!

The secret is to find a fruit you really like, freeze it, and then get working!
Using dates, almonds, and cinnamon for the crust- soaked cashews, bananas, maple syrup, and cinnamon for the "cheesecake filling"- finishing it all off with a mixture made from your frozen fruits, a couple dates, and a little bit of lemon zest if you used berries like I did!
I decided to stay tried and true to the blueberry cheesecake and boy oh boy, was it a success! The berry topping was made from frozen blueberries and strawberries that I pulsed together with 2 dates and just a hint of lemon zest!
This dessert doesn't really require any special measurements, which is another thing that is so AWESOME about it! It's all about making enough of each layer to satisfy the amount you need! So, if you need enough for one nights dessert for yourself, or a weeks worth, or for a party, you just use the ingredients listed ^^ to make the amount desired!
