I have a secret for life changing oatmeal raisin cookies and it starts with a "C"....

What's the big secret?
Confession time y'all! Your girl is the absolute worst at blind baking goodies that I bake far more often than I'd like to admit! This means I have a general idea what measurements and ingredients should be, but I go in like the three blind mice and just send it in the kitchen! While this isn't always the greatest thing to do, it did help me discover the way to make the most irresistible oatmeal raisin cookies! The key is cinnamon, lots of cinnamon. I'm talking 4 Tablespoons of cinnamon, but an unmeasured 4 Tablespoons. If you're a strict rule follower, no worries, if you measure a lot they'll taste just as sweet if you make 'em with love!
How to make it:
- 1/2 cup coconut oil -- sub 1/2 cup butter
- 3/4 cup firmly packed brown sugar
- 1/2 cup granulated sugar
- 2 medium sized eggs
- 1 tspn vanilla
- 1 1/2 cup almond flour -- sub 1 1/2 cup all purpose-flour
- 1 tspn baking soda
- 3+ tspn ground cinnamon
- 3 cups rolled oats (gluten-free optional)
- 3/4 cup raisins

~ pre-heat oven to 350°F
~ mix together oil and sugars until creamy. Mix dry ingredients separately and set aside.
~add eggs and vanilla and beat well.
~ add dry ingredients to wet ingredients, mix well.
~ mix in oats and raisins until coated well!
~ bake for 10-12 minutes, or until slightly golden.
